Caramel Brownie Pie (THM-S, low carb, gluten free, sugar free)

Ingredients
- CARAMEL SAUCE:
- 1/2 cup of THM Baking Blend
- 1/2 cup cocoa powder
- 1/2 cup butter (melted)
- 1/2 cup 0% greek yogurt or sour cream
- 1/2 cup of Pyure Stevia or Truvia (if using THM Gentle Sweet use 2/3 cup, you can use 3 or 4 tbsp. of THM Super Sweet BLEND or you can use 1 cup of Swerve or Xylitol)
- 8 drops of Liquid Stevia (you can add about a tsp more of Pyure Stevia or Truvia)
- 4 eggs
- 1 tsp vanilla
- 1 tsp baking powder
- sprinkle of salt
- 1/2 cup of pecans or walnuts (optional)
- 1/3 cup (and more for a topping) Caramel Sauce (see recipe below)
- 1/2 cup of butter salted or unsalted
- 1/2 cup of powdered gentle sweet (or equivalent)
- 1 tsp of blackstrap molasses
- 1 cup of heavy cream
- 1 tsp vanilla
- Salt to taste
Preparation
Step 1
CARAMEL BROWNIE PIE:
1. Use room temp butter or melt on high for 30 seconds in the microwave.
2. In the same big bowl add all of the ingredients and mix well.
3. Preheat oven to 350 degrees.
4. Grease a pie dish or a 9X9 glass baking dish. (I used 9" Springform)
5. Pour brownie batter into baking dish.
6. Make a double batch of the Caramel Sauce.
7. Pour about 1/3 cup of caramel sauce over the top of brownie batter and run a knife through the batter.
8. Place in the oven.
9. Bake at 350 degrees for 35-38 minutes.
10. Allow to cool for 10 minutes.
11. Top with more Caramel Sauce & or whipped cream & nuts!
12. ENJOY!
Serves 8
CARAMEL SAUCE:
1. Melt your butter in a microwave-safe bowl or jug.
2. Add in the sweetener, molasses, and cream. Stir well.
3. Microwave on high for 2 mins. (stir once or twice)
4. Stir and microwave on high for another 1-2 mins. (stir once or twice). It will be bubbly and be a caramel colour.
5. Stir in the vanilla and salt.
As it cools it will thicken.
Teresia's Note* Although absolutely delicious everytime, mine kept coming out more like a caramel syrup than a thick sauce. So I sprinkled about 1/3 teaspoon xanthan gum in with the butter and cream BEFORE cooking and perfection was achieved for my thickness preference!

I know this defeats the whole purpose of the caramel part of the recipe, but have you made it without the caramel sauce? I don’t have some of the ingredients for the sauce but would love a brownie on plan!
YES! If you do, you might want to bake a little less than what the directions say. It may not be as moist but it will still be good! If you want it to be more moist you can add some sugar free chocolate chips!
