Ingredients

  • 8 oz cream cheese
  • Cooking spray
  • 1/2 chopped onion
  • 8 slices bacon cooked crisp and crumbled
  • 2 (20 oz) pkgs simply potatoes homestyle slices
  • 1 3/4 c. chicken broth
  • 1 c. sour cream
  • 2 c. sharpe cheddar, shredded, divided

Step 1

Preheat oven to 375 degrees. Cut cream cheese into chunks and place in a large bowl to soften. Coat 13 x 9 baking pan with spray.

Cook bacon, crumble. Place potatoes and broth in microwave safe bowl and cover. Cook on high for 10 min. Stir, cover and cook 5 min. more. Stir bacon, sour cream and 1 3/4 c. cheddar into cream cheese. Stir in potatoes and broth until blended. Transfer to baking dish and cover. Bake 55 min. or until potatoes are tender. Remove cover and sprinkle with remaining 1/4 c. cheese. Bake 5 more min. or until cheese melts.
