Ingredients
- 950 grams Cake Flour
- 1 ,332 grams Sugar
- 113 grams Non-Fat Dry Milk
- 21 grams Salt
- 43 grams Baking Powder
- 475 grams Sweetex Shortening
- 780 grams Water
- 496 grams Egg White
- 57 grams Water
- Flavoring, To taste
- Turn mixer to speed 1 and add slowly while blending. After 30 sec. stop mixer and scrape bowl and paddle. Blend on speed 1 for 3 min. Scale 350g (12 1/3 oz.) into 8-in. round, well greased cake pans. Bake at 350o F for approx. 23 min.
Preparation
Step 1
Blend together cake flour, sugar,nonfat dry milk, salt and baking powder.
Add Sweetex and 2/3 of the water and turn on mixer on speed 1 using flat paddle. Add remainder of water while mixing, Turn mixer to speed 2 and beat 1min. Scrape bowl and paddle, then mix 5 min. on speed 2.
Turn mixer to speed 1 and add slowly while blending. After 30 sec. stop mixer and scrape bowl and paddle. Blend on speed 1 for 3 min. Scale 350g (12 1/3 oz.) into 8-in. round, well greased cake pans. Bake at 350 degrees F for approx. 23 min.
