Ingredients

  • 2 Tbsp olive oil
  • 1 lf bell peppers sliced
  • 12 oz broccoli slaw
  • 2 cup shredded carrots
  • 1 pt cherry tomatoes, halved
  • 3 cloves farlic minced
  • 1/2 pound whole wheat angel pasta
  • 1-2 TBSP balsamic vinegar

Preparation

Step 1

1. Heat oil and add peppers, slaw and carrots; cook until tender 8 minutes
2. Add tomatoes to skillet and cook until wilted
3. Add garlic and cook one minute
4. Prepare pasta and reserve 1/2 cup pasta water
5. Toss pasta, vegetables and reserved water and vinegar to taste
6. COok over med heated and season with salt and pepper
