Ingredients
- 1/3 cup + 1/4 cup flour
- 1/8 tsp nutmeg
- 10 oz frozen spinach
- 1/2 cup part skim ricotta
- 1/2 cup Parmesan cheese
- 2 large eggs beaten
- 15 oz can cannellini beans rinsed and drained
- 2 c reduced sodium chicken broth
- 1/4 tsp red pepper flakes
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 1/2 oz sliced, torn prosciutto
Preparation
Step 1
1. Whisk 1/3 cup flour, nutmeg and pepper
2. Squeeze out moisture from spinach and chop finely
3. Stir together spinach, cheese, eggs and flour mmixture
4. roll into 1 inch balls and roll in remaining flour
5. Add dumplings to boiling water for 5 minutes and remove, keep warm
6. Stir together beans, red pepper flakes and broth. SImmer until heated
7. Divide beans among 6 bowls and top with 5 dumplings; drizzle with oil and lemon juice and top with prosciutto
