Roasted Shrimp & Broccoli

Ingredients

  • 5 C broccoli florets
  • 1 T grated lemon rind, divided
  • 1 T lemon juice
  • Salt & pepper
  • 1 1/2 lbs large shrimp
  • 2 T olive oil
  • 1/4 t crushed red pepper

Preparation

Step 1

Preheat oven to 425
Cook broccoli in boiling water, 1 min. drain & plunge into ice water; drain.
Combine 1 1/2t lemon rind, juice, salt & pepper in med. bowl. Add shrimp; toss to combine. Arrange broccoli & shrimp in single layer on jelly-roll pan coated with cooking spray. Bake for 8 min. or til shrimp are cooked.
Combine oil, remaining lemon rind, salt & pepper & crushed red pepper in large bowl. Add broccoli; toss to combine. 268 Cal.

Serve with Garlic-basil corn:
Combine 2 T softened butter, 1 T chopped basil & minced garlic clove in msall bowl. Place 4 ears shucked corn in large saucepan of boiling water; cook 4 min. Drain. Spoon butter over corn & serve. Cal. 130
