  • 1 (10-ounce) package frozen green peas, thawed
  • 1/2 cup part-skim ricotta cheese
  • 2 scallions, thinly sliced
  • 1/4 cup Parmesan, grated
  • 1 tablespoon olive oil, plus more for serving
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon pepper
  • 1/4 cup fresh mint, thinly sliced

Step 1

In a food processor, purée the peas, ricotta, scallions, Parmesan, oil, Kosher salt and pepper.

Transfer the pea mixture to a bowl and fold in the mint. Drizzle with additional oil before serving, if desired, and serve with chips, baguette slices or veggie sticks. Enjoy!
