  • 1 1/2 lb flank steak
  • 1/2 C dry red wine
  • 1/2 C vinegar preferably red wine
  • 2 T mustard preferably Dijon
  • 2 T chopped fresh parsley
  • 2 1/2 tsp prepared horseradish
  • 1 1/2 tsp sugar
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1/4 tsp salt
  • 1/2 C beef broth
  • 1 1/2 T flour

Step 1

Prick meat all over with knife
In large nonaluminum dish combine next 10 ingredients
Add meat, turn to coat
Cover, refrigerate, turning once 3 hours or overnight
Position oven rack 6 inches from heat source, preheat broiler
Remove meat from marinade, reserving marinade; place on rack set in broiler pan.
Broil 5-8 minutes per side for medium rare. Remove meat, reserving pan juices
Cover meat, set aside
Meanwhile, in small pot combine broth with flour until smooth, place over high heat
Stir in reserved marinade and pan juices, cook, stirring, until thickened and reduced slight,k about 20 minutes
Discard bay leaf, serve over meat.
