Chinese Beef Steak with Cashews

Ingredients
- Sauce:
- 1 lb. good quality beef fillets or use beef tenderloin
- 3 oz. or more of roasted cashews, I use the salted so no extra salt is needed
- 4 green onions cut in 1" pieces
- 2 cloves garlic minced
- small amount ginger minced, fresh or jarred
- 3 tablespoons oil
- 1 tablespoon cornstarch
- 1/2 cup water
- 2 teaspoons sate sauce
- 1 teaspoon sesame oil
- 1 tablespoon soy sauce

Preparation
Step 1
In small bowl make sauce: cornstarch, water, sate sauce, sesame oil and soy sauce. blend till smooth and set aside.
Cut meat into thin slices about 2" long. Heat 2 tablespoons oil in wok and add beef in small batches without crowding meat and don't over cook so it will remain tender. Set beef aside till vegetables are cooked. Next add the last tablespoon of oil and add the garlic, green onions, ginger and cashews nuts, sauté 1 minute. Add beef back to the pan and toss with vegetables. Add the sauce mixture and stir until hot and well combined.
