Healthy Dill Potato Salad

Ingredients
- 4-5 lbs. of potatoes
- 3 stalks of celery – sliced thin
- 1 tablespoon of capers – chopped
- 1 tablespoon of caper juice
- 1/4 red or white onion – chopped
- 1 handful of fresh dill – chopped fine
- Dressing
- Juice of 1/2 lemon
- 3 cloves of garlic – minsed
- 1/4 cup Olive oil.
- Salt to taste
- salt and pepper to taste
Preparation
Step 1
Prepare potatoes into bite size cubes.
Boil the potatoes until just fork tender. Drain and leave in a colander to cool.
Add the first 5 ingredients to the potatoes, meanwhile prepare dressing and wisk till emulsified add to the potatoes and toss.
Place in the refrigerator until ready to use.
