Ingredients

  • 1 large egg
  • 2 large egg whites
  • 1 tablespoon fatfree or 1% milk
  • Sea salt and black pepper

Preparation

Step 1

In a small bow, combine the egg, egg whites, milk, and salt and pepper to taste. Whisk well until just slightly frothy.

Spray a medium (10-inch) nonstick skillet with olive oil and heat over medium heat. Pour in the egg mixture and, as it cooks, pull it away from the sides of the pan to let the uncooked egg flor underneath. After 1 to 2 minutes, cover and cook until the top is set and the bottom is nicely browned, about 1 minute.

Remove from the heat. Fold the omelet in half and slide out of the pan.
