Ingredients
- 1 Lb Fresh Cod Fillet -- Or Fish Of Choice
- 2 Tbsp Olive Oil
- 1 Egg -- Large
- 1/4 Cup Scallion -- Thinly Sliced
- 2 Tbsp Mayonnaise
- 1 Tbsp Lemon Juice -- Fresh
- 2 Tbsp Dijon Mustard
- 6 Tbsp Bread Crumbs
- 3 Tbsp Parsley -- Chopped
- 3 Dashes Hot Sauce -- Like Tabasco
- Salt -- To Taste
Preparation
Step 1
Preheat oven and bake cod or fish of choice (if salmon would work here) with 1 tablespoon of oil until cooked through. Flake with a fork.
In a large bowl combine, cooled cooked fish, egg, scallions, mayonnaise, lemon juice, mustard, breadcrumbs, parsley, hot sauce, 1/8 tsp. salt and 1/8 tsp of pepper. Mix gently until ingredients hold together.
Form mixture into eight equal patties. Freeze on baking sheet until firm and then wrap each patty in plastic and store in reseal able freezer bag. Thaw before cooking.
To serve: Heat oil in non stick skillet. Cook cakes until golden brown on each side. About two minutes.
