Ingredients
- Crust:
- 3/4 cup coarsely ground walnuts (or pecans)
- 3/4 cup graham cracker crumbs
- 3 tablespoons melted butter
- Filling:
- 4 8-oz packages cream cheese (don't go generic) - room temp!
- 4 large eggs
- 1 1/4 cups sugar
- 1 tablespoon fresh lemon juice
- 1 tablespoon vanilla
- Topping:
- 2 cups sour cream, mixed with
- 1/4 sugar
- 1 teaspoon vanilla
Preparation
Step 1
Crust:
Throw all ingredients in the food processor and chop up together.
Press firmly into bottom and slightly up sides of a 9 or 10 inch springform pan.
Filling:
Beat til smooth
Pour into pan - set it on another sheet to catch butter and place in 350 oven anywhere from 40 to 45 min for a 10 inch cake or 50 to 55 for a 9-inch cake. It will rise slowly and crack -no worries.
Take it out of the oven and while still hot smooth on topping.
Refrigerate overnight or at least a few hours.
