Ingredients
- 1/4 cup hoisin sauce
- 1 tablespoon soy sauce
- heaping teaspoon corn starch
- 2 tablespoons vegetable oil
- 1 pound ground chicken or turkey
- 1 large carrot, peeled and finely diced
- 3 cloves garlic, finely chopped
- 4 scallions, whites and greens separated and chopped
- Sweet chili sauce, to taste
- 1 large head butter lettuce, leaves separated
Preparation
Step 1
in a small bowl, combine the hoisin sauce and soy sauce with 1/3 cup water and cornstarch.
In a large skillet or wok, heat 1 tbsp. oil over medium-high. Add the carrot cook 2 minutes then add chicken and cook, breaking apart with a wooden spoon, until well done.
Reduce the heat to medium, add the the garlic and scallion whites and cook 1 minute. Stir in the hoisin mixture and cook until the sauce thickens and coats the chicken and vegetables, 1 to 2 minutes. Add the sweet chili sauce to taste.
Divide the lettuce leaves among 4 plates. Top each leaf with the chicken mixture; sprinkle with the scallion greens.
