Grilled Zucchini with Sherry Vinegar

Ingredients

  • 3 zucchini sliced lengthwise 1/4 " thick
  • olive oil
  • coarse salt
  • 4 tsp sherry vinegar
  • red-pepper flakes
  • 1/4 c small mint leaves

Preparation

Step 1

Preheat grill to med-high.

Brush zucchini slices with olive oil, season with coarse salt. Grill, turning frequently, until softened and browned in spots, about 8 minutes.

Toss with 4 tsp sherry vinegar and a pinch of red pepper flakes.

Let cool to room tem and sprinkle with 1/4 c small mint leaves
