Ingredients

  • 3/4 cup skim milk
  • 1 (3-inch) cinnamon stick
  • 1 1/2 cups old-fashioned rolled oats
  • Grapeseed oil spray
  • 2 apples or pears, peeled and chopped (about 2 cups)
  • 2 Tbsp light brown sugar
  • 2 Tbsp raisins
  • 1 Tbsp honey
  • 2 Tbsp sliced almonds, toasted

Preparation

Step 1

Combine the milk and cinnamon stick in a small saucepan and bring just to the boil. Remove the pan from the heat, cover and let stand for 10 minutes.

Meanwhile, in a medium saucepan, bring 3 3/4 cups water to a boil. Stir in the oats and reduce the heat to low. Simmer gently for 10 minutes. Remove the pan from the heat.

While the oatmeal is cooking, mist a medium saucepan with grapeseed oil and heat over high heat. Add the apples and brown sugar and cook, stirring, until the sugar melts and starts to brown, about 2 minutes. Stir in the raisins. Remove form the heat and set aside.

Strain the hot cinnamon-infused milk into the cooked oatmeal. Add the honey, and stir to combine.

Divide the oatmeal among four warms bowls. Top each serving with the caramelized apples an raisins and sliced almonds. Serve hot.
