Ingredients

  • 4-5 large onions
  • 3 T butter
  • 1/4 t peppercorns, coarsely crushed
  • 1 T flour
  • 3 can 10 1/2 oz ea beef broth
  • 1 bay leaf
  • 3 C water
  • 1/2 C grated swiss cheese

Preparation

Step 1

Heat butter in heavy sauce pan over medium heat. Add onions and peppercorns. Cook, stirring frequently till onions are light brown. Sprinkle onions with flour, cook 1 minute, stirring constantly.
Add beef broth, water and bay leaf, correct seasoning.
Turn into oven proof bowls.
Sprinkle with cheese,
Place under broiler or in 400F oven till cheese turns brown.
