Ingredients
- 1 1/2 cups all-purpose flour (or even better, whole wheat pastry flour-in health food stores)
- 1 cup of uncooked oatmeal
- 2/3 cup firmly packed brown sugar
- 1 1/4 tsp. baking powder
- 1/2 tsp. salt (can be omitted)
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 tsp. baking soda
- 2 Tbs. vegetable oil (or 3 tbs. of unsweetened apple sauce)
- 1 tsp. vanilla extract
- 2 cups frozen peaches, defrosted, drained and smashed up
- 1 cup strawberry fat free yogurt
- 1/4 cup fat free milk
- 2 eggs or 2 egg whites
Preparation
Step 1
Combine flour and oats, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon in a large bowl. Mix thoroughly using a large flat spoon or a whisk. Slowly add milk, oil, (skip the oil if using apple sauce), vanilla, and eggs and stir until well blended.
Add defrosted drained and smashed peaches and yogurt into the large bowl. Stir until all ingredients are moist.
Using a 12 cup muffin tin, spoon batter into each one filling half full. Bake at 400 degrees for 20 minutes.
Here's the twisted part, let the kids smash the peaches with a meat tenderizer tool and they have done two things, helped to prepare the muffins and released stress by pounding their food. Don't ask me why they like to pound things so much, but it sure pays off when they have had a bad day at school.
