Ingredients
- 1 Tbl plus 1 C vegetable oil
- 3 C unsifted all purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 2 C granulated sugar
- 2 large eggs
- 3 Tbl milk
- 2 C (about 2 large) tart apples, peeled, cored and diced, 1/2-inch
Preparation
Step 1
Preheat oven to 350 degrees.
Using 1 Tbl oil, grease a tube pan or 2 mini (5.25 x 3 x 2.5 inches) loaf pans.
In medium bowl, sift together flour, salt, baking powder, baking soda and cinnamon and set aside.
In large bowl, blend sugar and remaining cup of oil. Add eggs and milk and beat until well combined.
Add reserved dry ingredients to sugar mixture and stir until just blended. Fold in apples. It will make a very thick batter.
Press batter evenly into prepared pan and bake for 50-60 minutes or until toothpick inserted into center comes out clean.
