Ingredients
- 1 cup drained, oil-packed sun-dried tomatoes
- 1/2 cup ricotta cheese
- 1 tsp balsamic vinegar
- a few torn fresh basil leaves
- freshly ground black pepper to taste

Step 1
Place sun-dried tomatoes in a food processor fitted with a blade attachment and pulse 3 - 4 times. Add remaining ingredients and pulse until a coarse paste forms. Tastes great with cured meats, fresh mozzarella, prosciutto,or roasted vegetables.
