Mock Hollandaise Sauce

To be used in conjunction with Eggs Benedict.

Ingredients

  • 3 Tblsp margarine
  • 3 Tblsp flour
  • 1 cup milk
  • 2 egg yolks, slightly beaten
  • 2 Tblsp lemon juice
  • Salt and pepper to taste

Preparation

Step 1

Heat butter and stir in the flour. Cook 1 minute. Add milk slowly and stir. Whisk in the egg yolks, cook for 1 minute. Stir in the lemon juice ans season to taste.
