Mini Quiches (4 flavours)

Ingredients

  • 36 unbaked tart shells
  • 3 eggs beaten
  • 2 c homogenized milk
  • 1/4 tsp pepper
  • 1/4 tsp Tabasco
  • Filling 1
  • 3/4 lb blue cheese
  • 24 slices bacon, crisp and finely chopp0ed
  • 5 tbsp fresh thyme
  • Filling 2
  • 1-3/4 c finely minced fennel
  • 1/2 lb old Cheddar, grated
  • pepper
  • Filling 3
  • 2/3 cu finely diced, drained sun-dried tomatoes
  • 4-5 tbsp minced capers
  • 1-1/4 c crumbled chevre
  • 1 oz basil, finely chopped
  • Filling 4
  • 1-1/4 c finely chopped BBQ salmon tips
  • 1 cu finely chopped spinach
  • 8 tsp grated lemon peel
  • 5 small green onions, minced
  • black pepper

Preparation

Step 1

Each filling makes 36 tarts. Custard mixtures makes 36 tarts

Place a tbsp of filling ine ach tart shell.
Pour the custard mixture over to fill each tart.
Bake 25 minutes at 375 deg F
