Ingredients

    cup Yellow corn meal

  • 1

    cup All-purpose flour

  • 1

    teaspoon Baking powder

  • 1/2

    teaspoon Baking soda

  • 3/4

    teaspoon Kosher salt

  • 1/4

    teaspoon Paprika

  • 1/4

    teaspoon Black pepper

  • 1

    Pinch Cayenne pepper

  • 1

    Large onion (finely diced)

  • 2

    Eggs (slightly beaten)

  • 1

    cup buttermilk

  • 2

    Cloves Garlic (minced)

  • 2

    tablespoon bacon fat (melted)

  • 6

    cup Vegetable oil for frying

2 cup Yellow corn meal 1 cup All-purpose flour 1 teaspoon Baking powder 1/2 teaspoon Baking soda 3/4 teaspoon Kosher salt 1/4 teaspoon Paprika 1/4 teaspoon Black pepper 1 Pinch Cayenne pepper 1 Large onion (finely diced) Combine dry ingredients, then add diced onion. 2 Eggs (slightly beaten) 1 cup buttermilk 2 Cloves Garlic (minced) 2 tablespoon bacon fat (melted) Combine eggs, buttermilk, garlic and melted bacon fat. Stir wet ingredients into dry just until combined. Do not overmix. 6 cup Vegetable oil for frying Fry rounded teaspoonfuls in oil preheated to 350 degrees F. for 3-4 mins until golden brown.
