Ingredients
- BOURBON MUSTARD:
- 16 slices pumpernickel
- 8 slices baby Swiss cheese
- 1 pound thinly-sliced Smithfield ham
- 3/4 cup Creole mustard
- 2 tablespoons Steens cane syrup
- 1 tablespoon honey
- 2 tablespoons bourbon
- APPLE SLAW:
- 2 cups thinly-sliced cabbage
- 1/2 red onion thinly sliced
- 1 apple cored, seeded, and julienned
- 1 tablespoon chopped pickled jalapeño
- 1/4 cup golden raisins
- 1/4 cup toasted slivered almonds
- 1 tablespoon chopped mint
- 1 tablespoon honey
- 1/2 cup mayonnaise
- Salt to taste
- Freshly-ground white pepper to taste

Preparation
Step 1
Spread 8 slices of the bread with the bourbon mustard. Next place a slice of cheese followed by 2 ounces of the shaved ham. Finish the sandwich with 1/4 cup of the slaw and another slice of the bread.
For the Bourbon Mustard: Combine all ingredients in a small mixing bowl and mix well.
For the Apple Slaw: In a medium mixing bowl, combine all of the ingredients except the salt and white pepper. Mix thoroughly and season with salt and white pepper.
This recipe yields 8 servings.
