Ingredients
- 2 bunches cilantro, stems removed
- 1 large clove garlic, coarsely chopped
- 2 jalapeno chiles, coarsely chopped
- 1 1/2 t salt
- 2 T plus 3/4 C olive oil
- 2 T cumin seed, toasted & ground
- Juice of 1 lime
Preparation
Step 1
Toss the cilantro, garlic, and jalapenos in a medium bowl with 1/2 t of the salt & 2 T of the oil. Let stand for 20 minutes. Place the mixture in a food processor & process to a paste.
With the machine running add the ramining oil. Mix in the cumin & lime juice.
Taste & adjust the seasoning.
