Ingredients

  • 1 pound fresh green beans, cut into 1/2 inch pieces
  • 15 oz. black eyed peas (or any bean of your choice)
  • 1 cup grape tomatoes
  • 1 small red onion, chopped
  • 2 tbsp. balsamic vinegar
  • 4 tbsp. olive oil
  • 1 garlic clove, minced
  • 1/4 tsp. salt
  • 1/8 tsp. crushed red pepper flakes
  • 1/4 tsp. ground mustard
  • 2 tbsp. sesame seeds toasted
  • 1 cup cooked quinoa

Preparation

Step 1

 Steam beans for 8-10 minutes until crisp-tender. Rinse with cold water; pat dry.
 In a large bowl, combine the beans, peas, tomatoes and onion. Fold in quinoa. In a small bowl, whisk the vinegar, oil, garlic, salt, red pepper flakes and mustard; pour over bean mixture. Sprinkle with toasted sesame seeds.
