Ingredients
- 1 pound fresh green beans, cut into 1/2 inch pieces
- 15 oz. black eyed peas (or any bean of your choice)
- 1 cup grape tomatoes
- 1 small red onion, chopped
- 2 tbsp. balsamic vinegar
- 4 tbsp. olive oil
- 1 garlic clove, minced
- 1/4 tsp. salt
- 1/8 tsp. crushed red pepper flakes
- 1/4 tsp. ground mustard
- 2 tbsp. sesame seeds toasted
- 1 cup cooked quinoa

Step 1
Steam beans for 8-10 minutes until crisp-tender. Rinse with cold water; pat dry.
In a large bowl, combine the beans, peas, tomatoes and onion. Fold in quinoa. In a small bowl, whisk the vinegar, oil, garlic, salt, red pepper flakes and mustard; pour over bean mixture. Sprinkle with toasted sesame seeds.
