  • 5 eggs
  • 1 cup margarine or butter
  • 1 1/2 cups sugar
  • 1 tsp baking soda
  • 1 cup buttermilk
  • 2 cups flour
  • 1 cup coconut
  • 1 cup chopped nuts
  • 1 tsp vanilla
  • 1 tsp coconut extract

Preparation

Step 1

Separate eggs and beat until stiff, set aside. Cream butter,and sugar. Add egg yolks one at a time, beating well after each addition. Dissolve soda in buttermilk; add alternatively with flour. Beat well, add coconut, nuts and extracts. Fold in stiffly beaten egg whites. Fill muffins cups, and bake at 25 - 30 mins at 350F.
