Spinach and Lentil Soup with lemon

  • 1 T vege oil
  • 1 med onion diced
  • 1 clove garlic
  • cayenne pepper
  • black pepper
  • 1 bag (10) oz fresh spinach
  • 1 19 oz can of lentils
  • 5 c veg or chicken stock
  • 1 lemon juice and zest



Step 1

In large sauce pan heat oil add onion and garlic until soft add big pinch of cayenne pepper and several grinds of black pepper. Cook another min or 2 the add fresh spinach washed stemmed and chopped and cook stirring until wilted. Add can of lentils and stock
Bring to boil reduce heat to low and simmer 15 mins.
Stir in juice and zest of lemon add salt.
