Spicy Beet Cake

Ingredients

  • 3/4 cup safflower oil
  • 2/3 cup cane sugar
  • 2 eggs beaten
  • 1 1/2 cups grated fresh beets (peeled)
  • 1/4 cup pecan pieces
  • 1/4 cup chopped raisins
  • 5 chopped prunes
  • 1/8 tsp. each of allspice, nutmeg and coriander
  • 1/2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 cup spelt flour
  • 1/2 tsp. sea salt

Preparation

Step 1

Mix together oil with sugar in a medium size bowl. Add eggs and mix well. In a separate bowl combine flour, allspice, nutmeg, coriander, cinnamon, salt, baking soda and baking powder.
Fold into sugar mixture and add pecans, chopped raisins, chopped prunes, and grated beets. Pour batter into 9 inch greased and floured cake pan and bake at 325° for 30-40 minutes or when toothpick comes out clean.

Cream Cheese Icing (optional)
Cream together 8 oz. light cream cheese and 4 oz. unsalted butter. Add 3 tsp lemon juice and slowly fold in 1 lb. icing sugar. Beat until creamy and smooth and sprinkle with coconut and chopped raisins.
