Ingredients

  • 100 g fish, cut into bite size chunks
  • 3/4 cup fish or veggie stock
  • 200 g celery
  • 1 teaspoon curry powder
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon xanthan gum
  • 1/4 teaspoon ginger
  • 2 cloves garlic
  • Fresh Cilantro, chopped for garnish and flavor

Step 1

Make Sauce: Add xanthan gum to curry powder and mix, add 1/4cup of broth. Set aside

In a skillet, add half cup stock, the ginger and garlic and heat till aromatic, Add the celery and heat till warm stirring to incorporate the flavors. Add the Fish chunks and the rest of the broth. When the fish turns white, add the sauce to the pan and cook stirring until either thickened or till the fish is fully cooked. Remove from heat and stir in chopped cilantro. If thickened serve on a platter, if not serve in a soup bowl.

Optional - Serve with apple slices or leave out the celery and serve over "cabbage rice."
