Poundcake with Strawberries and Ice Cream

Jack loves a slice of pound cake with fresh strawberries in syrup and (not pictured here) a scoop of vanilla ice cream.

Ingredients

  • 1-2 slices plain poundcake (Make your own! Recipe below)
  • 1 scoop vanilla ice cream
  • Strawberries in syrup
  • ..................................................
  • LITTLE DIXIE POUNDCAKE MINI-LOAF
  • 3 Tablespoons butter (no substitutes), softened
  • 6 Tablespoons sugar
  • 1 egg
  • 6 Tablespoons all-purpose flour
  • 1 pinch baking soda
  • 7 teaspoons buttermilk
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon orange extract
  • In a small mixing bowl, cream the butter and sugar. Beat in egg. Combine flour and baking soda; add alternately with buttermilk to creamed mixture. Blend in extracts.
  • Pour into a greased 5-3/4-in. x 3-in. x 2-in. loaf pan. Bake at 350 degrees for 30-35 minutes or until cake tests done. Cool for 10 minutes; remove from the pan to cool on a wire rack. Yield: 1 mini loaf

Preparation

Step 1

JACK'S FAVORITE VANILLA ICE CREAM:

4 egg yolks
1 cup sugar
2 tsp vanilla extract
2 cups heavy cream
2 cups half & half

In a large bowl, beat the egg yolks. While continuing to beat, gradually add the sugar, vanilla, heavy cream and half & half.
Mix until all is incorporated. "Age" in refrigerator, covered, for at least 4 hours. Process in ice cream maker. Makes slightly more than one quart. Store in a tighly covered container in the freezer.



MY NOTES: Do this in TWO batches in my Cuisinart ice cream maker. Be sure and churn a good long time, until ice cream comes way up to the top opening. This recipe makes EXCELLENT vanilla ice cream....really top quality! Perfect to serve to guests - and really easy to make!
