Fried Rice With Crab

Any meats or seafood will work for this recipe as it's a basic fried rice. Any vegetables can be used if diced. Even leftover rice and leftover vegetables work.

Ingredients

  • 1 container crab meat (this can be found in seafood section or get canned crab on the canned tuna area of supermarket)
  • 1 medium onion chopped
  • 6 green onions cut in slants about 1/4 inch width
  • 2 eggs beaten in small bowl
  • 1 1/2 cups long-grain rice cooked according to directions on package
  • pinch of salt
  • 1 tablespoon soy sauce
  • 2 tablespoons oil
  • 1 teaspoon sesame oil

Preparation

Step 1

Spread cooked rice evenly over cookie sheet and refrigerate until cold. Drain the crab meat and set aside (if canned drain and flake). Heat the oils in frying pan or wok. Beat eggs and pour into pan and let it lay flat like an omelet. When cooked removed from pan and cut into strips. Sauté the onions for 1 minute then add all of the chilled rice. If necessary, add more oil in order to keep turning the rice over and over with a spatula. Add crab, egg strips and soy sauce then toss all together for about 1 minute.
