Ingredients
- 1 cup white rice
- 2 Tbsps olive oil
- 1 tsp minced garlic
- 3 tsps ground cumin
- 1 can rotel tomatoes
- 1 1/2 cup water
- salt and pepper
Preparation
Step 1
Brown rice in olive oil with garlic and cumin. Add rotel tomatoes, and water. Bring to a light boil. Lower heat, cover and cook until liquid is absorbed. about 15 minutes. Salt and pepper to taste.
I sometimes add a can of kidney beans to the rice when I add the liquid.
