Ingredients
- 2 pounds Roma tomatoes, cored and diced small
- 1/2 cup tomato juice
- 1 small jalapeno, seeded and minced (use seeds for hotter salsa)
- 1 medium red or maui onion, diced small
- 1 garlic clove minced
- 1/2 cup chopped cilantro
- 1/4-1/2 cup fresh lime juice
- Salt to taste
Preparation
Step 1
Mix all ingredients in glass bowl. Refrigerate in an airtight container to allow flavors to blend.
I suggest about 2 hours in the fridge before serving
Store up to 5 days.
