Kings or reds are best, but any salmon works! Silver is a bit oily and may need longer drying and smoking time.

Ingredients
- 1 1/2 - 2 lbs. salt
- 1 lb. Brown Sugar
- 1 oz. white pepper
- 1 oz. bay leaves finely crumbled
- 1 oz. allspice
- 1 oz. gr. cloves
- 1 oz. mace

Preparation
Step 1
Filet fish and cut in strips
Coat fish and soak 8 - 12 hours.
Rinse, Scrub, and Dry 6 hours
Smoke with wood chips of your choice.
