Kings or reds are best, but any salmon works! Silver is a bit oily and may need longer drying and smoking time.

Ingredients

  • 1 1/2 - 2 lbs. salt
  • 1 lb. Brown Sugar
  • 1 oz. white pepper
  • 1 oz. bay leaves finely crumbled
  • 1 oz. allspice
  • 1 oz. gr. cloves
  • 1 oz. mace

Preparation

Step 1

Filet fish and cut in strips

Coat fish and soak 8 - 12 hours.

Rinse, Scrub, and Dry 6 hours

Smoke with wood chips of your choice.
