Magnolia Lace Trumpets

Pretty adult cookies, great for holidays, showers, and elegant parties yet simple to make.
Ingredients
- Cookies:
- 1/2 cup sugar
- 1 stick salted butter
- 1/3 cup dark corn syrup
- 3/4 cup all-purpose flour
- 1/2 teaspoon ground ginger
- 1 tablespoon Irish cream liqueur (optional)
- Filling:
- 1 1/2 cups vegetable shortening
- 1 stick salted butter
- 1 1/2 cups sugar
- 1 large egg white
- 2 teaspoons vanilla extract
- 1/2 cup milk, heated

Preparation
Step 1
Preheat oven to 350 degrees. Line cookie sheet with foil and grease well.
Cookies:
In medium saucepan combine sugar, butter, and corn syrup. Cook mixture over low heat until butter melts then remove from heat.
Mix in flour and ginger in a bowl. Add to butter mixture stirring well. Stir in liqueur. Drop batter by rounded teaspoonfuls 3-4 inches apart onto prepared cookie sheet. (bake about 2-3 cookies at once). Bake until cookies spread are bubbly and golden (9-10 mins).
Remove from oven and work quickly. Gently lift each cookie off the with a spatula and wrap around the greased handle of a wooden spoon to make into trumpets. Once set, slide the cookie off the handle and cool on a wire rack. (if cookie gets too brittle to roll, return to oven for 1 min).
Filling:
Using mixer, cream shortening and butter in bowl. Add sugar and beat well. Add egg white and vanilla and beat well. Add hot milk 1 tablespoon at a time, beat until creamy. Scrape into a pastry bag fitted with a star tip and fill cookies.
