Banana Pudding Cupcakes

Ingredients

• Cake:
• 1 Box yellow cake mix plus ingredients on box
• 3 mashed up bananas
• 1/4 cup lite brown sugar, packed
• 1- 1 1/4 tsp banana extract flavoring
• 1 pkg instant pudding mix banana cream
• Filling:
• 1 pkg vanilla pudding mix
• 2 cups cold milk
• 1 banana
• vanilla wafers
• Icing:
• 1/2 cup butter
• 1/2 cup shortening
• 4 cups powdered sugar
• 1 tsp vanilla extract

Preparation

Step 1

Mix all cake ingredients & bake according to box. Once cool, cut out center of cupcake.

Mix pudding according to box. Place a banana slice in center of cupcake and fill rest with pudding.Cover the top of cupcake with vanilla wafer.

Mix buttercream. Place in piping bag on cupcakes. Garnish with vanilla wafer & crumbs.
