Panna Cotta with Fresh Berries

Ingredients

  • Lightly oil 6oz custard cups
  • 2 tsp unflavored powdered gelatin
  • 2 tbsp cold water
  • 3 cups whipping cream
  • 1 1/2 tsp vanilla
  • 1/2 cup sugar
  • 1 cup sour cream
  • Pinch salt
  • 2 cups assorted fresh berries
  • Almond Cookies
  • STRAWBERRY SAUCE
  • 1 lb fresh strawberries
  • 1/4 cup sugar
  • 1 tbsp lemon juice

Preparation

Step 1

Sprinkle the gelatin over cold water and give a quick stir with a form. Let stand 5 minutes. In 3 qt saucepan warm the cream with the sugar, salt, and vanilla over medium high heat. Do not let it boil. Stir in the gelatin until dissolved. Take the cream off the heat and cool for about 5 minutes.

Put the sour cream in med size bowl Gently whisk in the warm cream a little at a time until smooth. Taste for sweetness. It may need another tsp of sugar. Divide mixture equally between the oiled custard cups. Chill 4-24 hours.

Unmold cups. Serve with Strawberries, sauce, and almond cookies.

SAUCE
Puree strawberries in blender along with sugar and lemon juice.
