Ingredients

  • 2 cups elbow marconi
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cucumber, peeled, seeded and finely chopped
  • 2 celery stalks, finely chopped
  • 1/2 cup fresh dill chopped
  • 4 tablespoons lemon juice
  • Coarse salt and pepper

Preparation

Step 1

1. In a large pot of boiling salted water, cook elbow marconi according to package instructions
2.Meanwhile , in a medium bowl, combine mayonnaise, sour cream, cucumber, celery, fresh dill and lemon juice
3. Drain elbows and rinse with cold water; add to bowl with mayonnaise mixture. season with slat and pepper, toss to combine
4. Serve or refrigerate covered up to one day
