Spring Risotto

Ingredients

  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups uncooked minute rice
  • 1 (14.5 oz) can chicken or veggie broth, warmed
  • 1/2 cup milk
  • 1 bunch broccoli, chopped
  • 1/3 cup Parmesan cheese
  • salt & pepper to taste

Preparation

Step 1

Melt butter with olive oil in a deep skillet on medium heat. Once melted add onion and garlic. Cook for 2-3 minutes (do not brown).

Toss in rice and stir to coat in butter/oil mix. Add warmed broth, milk, and broccoli.

Bring to boil over medium heat; simmer for 5 minutes over low heat. Mix in 1/4 up Parmesan cheese. Sprinkle with remaining cheese just before serving.

Each serving = 1 cup
