Parmesan Crusted Drumsticks
- 1/4 cup Dijon mustard
- 2 Tbsp. light mayo
- 1 Tbsp. water
- 1 tsp. Worcestershire sauce
- 1 sleeve round buttery crackers, crushed (about 1 1/2 cups)
- 1/2 cup grated Parmesan cheese
- 3/4 tsp. smoked paprika
- 1/2 tsp. salt
- 10 chicken drumsticks
Preheat oven to 400. Place a wire rack in a rimmed baking sheet. Spray rack with nonstick cooking spray.
In a small bowl, combine mustard, mayo, 1 Tbsp. water, and Worcestershire sauce. In a shallow dish, combine crushed crackers, cheese, paprika and salt.
Brush drumsticks with mustard mixture to coat. Dredge drumsticks in cracker mixture to coat, and place on prepared rack.
Bake for 30-40 mins. or until chicken is golden brown and cooked through. Serve immediately.
