Ingredients
- 1 cup raw peanuts*
- 1 cup sugar
- 1/2 cup white corn syrup
- 1/4 tsp. salt
- 1 tsp. butter
- 1 tsp. vanilla
- 1 tsp. baking soda
- *(if roasted salted peanuts are used, omit salt and add nuts after first 4 minutes of cooking)

Stir together peanuts, sugar, syrup, and salt in a 1 1/2 quart casserole. Place in microwave and cook 7 - 8 minutes. Stir well after 3 minutes. Add butter and vanilla to syrup, blending well. Return to oven and cook 1-2 minutes more. Peanuts will be slightly browned and syrup very hot. Add baking soda and gently stir until light and foamy. Pour mixture onto lightly greased cookie sheet. Let cool 1/2 to 1 hour. When cool, break into small peices and store in an airtight container. Makes 1 pound. ** If dry roasted peanuts are used, stir together sugar and syrup and cook for 3 minutes. Mix well and add peanuts to mixture. Cook 2 1/2 minutes longer. Add butter and vanilla to syrup, blending well. Cook for 1 minute more. Add baking soda and gently stir until light and foamy.
