Ingredients
- 8 chicken thighs
- 1 chopped onion
- 1/2 c white vinegar
- 1/4 c EVOO
- 1/2 c OJ
- 3 T lime juice
- 1 T sugar
- 1 tsp. salt
- 1 T dried thyme
- 1 1/2 T allspice
- 3 garlic cloves
- 2 tsp. tabasco
- 4 3/4 " slices pineapple
Preparation
Step 1
Combine all ingredients. Marinate at least 3 hours. Preheat oven to 375 and grease a baking pan. Bake chicken and pineapple until cooked, 40-50 minutes.
Simmer half of marinade until reduced by half. Serve with chicken.
