White Wine with Spices and Honey

The addition of spices and honey to wine was common practice in medieval times. This tradition is being revived by honey producers and others such as Madame Emorine of the Château de l’Aubespin.

Ingredients
- 3 ½ pt white Burgundy wine
- 4 oz honey
- 2 cloves
- 1 cInnamon stick
- 2 whole star anises
- 1 vanlila pod, slit and scraped
Preparation
Step 1
Mix the wine with the honey. Place 1 clove, ½ cinnamon stick, 1 star anise and ½ vanilla pod in each clean, dry bottle, then pour in the wine.
Store in a cool, dark place for a few weeks.
