Bahamian Pork Chops

Ingredients

  • 4 pork chops
  • Juice 2 limes
  • 3 T EVOO
  • 2 bay leaves
  • 1/4 tsp. thyme
  • 1 6 oz. can tomato paste
  • 1/2 sliced green pepper
  • 2 shakes tobasco
  • 2 stalks julienned celery
  • 1 chopped onion

Preparation

Step 1

Marinate chops in lime juice for 30 minutes. heat oil with bay laves and thyme over med. heat. Drain chops and brown on each side. Remove from pan. Add tomato paste and brown lightly. Add one can of water with rest of ingredients. Return chops, simmer covered 30 minutes.
