Egg and Sausage Muffins

Ingredients

  • 1 lb. sausage
  • 12 large eggs
  • 1/2 cup whipping cream
  • 1/2 cup water
  • 1/2 tsp. salt
  • 1 1/2 cups shredded cheddar cheese

Preparation

Step 1

PREHEAT OVEN TO 350 DEGREES
Coat a nonstick muffin tin with cooking spray.
Remove sausage from it's casing and crumble the meat into a large frying pan. Cook over medium heat stirring to break up the pieces, for 5 minutes, or until browned. Divide the meat evenly among the prepared muffin cups.
In a large bowl, whisk together the eggs, cream, watter, and salt. Pour over the sausage and top with cheese.
Bake for 20 to 30 minutes or until the eggs are cooked through.
Cool slightly and remove from the tins.
