Ingredients
- 1 can (8oz) crushed pineapple, with juice
- 1 package (15.5oz) banana nut muffin mix
- 1 egg
- 2 tbsp vegetable oil
Preparation
Step 1
1. Pour pineapple into a fine mesh sieve set over a glass measuring cup. Press down lightly on fruit with the back of a spoon to drain well. Set fruit aside. Add enough water to the juice to equal 2/3 cup. Set aside.
2. In a large bowl, whisk together muffin mix, egg and oil until blended. Stir in pineapple and juice.
