Ingredients
- 1 3 pound Chicken
- 1 small Onion, chopped
- Black peppercorns and fresh chopped Parsley (optional)
- 3 Carrots, sliced
- 2 1/4 cups Bisquick baking mix
- 3/4 cup Milk
- 2 ounces Grated Parmesan Cheese
- 1/2 tsp. Garlic Powder
Preparation
Step 1
Place chicken and onions in a Dutch Oven or large pot. Cover with water. Add peppercorns and Parsely if using. Simmer until chicken is cooked and broth is rich and reduced, 2-4 hours. Remove chickenand strain stock. Let cool. Remove chicken fromthe bones, shred and discard skin and bones. Add chicken and carrots to the broth. Simmer 15 minutes.
Combine Bisquick, milk, cheese and garlic powder. Mis well w3ith a fork. Drop forks full of dough into the simmering broth, filling in the spaces between dumplings as you work.Cook uncovered 10 minutes. Cover and cook another 10-15 minutes, until dumplings are thoroughly cooked.
Nowhere does this recipe call for salt. Be prepared to add some!
