Silvana's All-Purpose Gluten-Free Flour Blend

This is one of the best gluten-free all purpose blends that I know of so far. I have substituted it in some of my recipes for regular all-purpose wheat flour and it performs beautifully. It is from the cookbook "Cooking for Isaiah" by Silvana Nardone.

Ingredients

  • 6 cups white rice flour
  • 3 cups tapioca flour
  • 1 1/2 cups potato starch
  • 1 T. salt
  • 2 T. xanthan gum

Preparation

Step 1

In a large bowl, whisk together the rice flour, tapioca flour, potato starch, salt, and xanthan gum. Transfer to an airtight container and store in a cool, dry place or in the refrigerator.

(I store mine in a labeled plastic storage bag.)
